Toronto’s First Build-Your-Own Pho Restaurant Opens on Queen West This Month
Build-your-own pho is coming to Toronto, and it lands on Queen West later this month. Renso Pho-Potle, which bills itself as the city’s first restaurant of its kind, opens on Saturday, Oct. 24 at 506 Queen St. W. Founder Linda Vu is bringing a fast-casual, pick-your-own format to Vietnam’s famous noodle soup. As a result, diners choose their own broth, protein, seasonings and garnishes. The menu also goes beyond pho, with a few Vietnamese favourites on the side.

How the Build-Your-Own Pho Works
The idea is simple. First, guests choose a broth. Next, they add a protein and pick their seasonings. Finally, they finish the bowl with garnishes. This way, every bowl matches each diner’s taste.
What Else Is on the Menu
- Spring rolls
- Bò Sốt Vang, a Vietnamese beef stew braised in red wine
- Dry pho, served without the soup
So if you love the idea of a build-your-own pho bowl made exactly your way, Renso Pho-Potle is worth a visit once it opens on Oct. 24.
