Michelle’s recipe uses simple ingredients that work well for a summer breakfast.

Ingredients

  • 1/3 cup all-purpose flour
  • 1/4 cup spelt or rye flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 3 tbsp granulated sugar
  • 1 cup local Greek yogurt, plus more for garnish
  • 1 tsp vanilla
  • 2 eggs
  • 1–3 tbsp local milk, added as needed
  • Local salted butter for the pan
  • Blueberries
  • Maple syrup

Directions

First, whisk together the flours, baking powder, baking soda, salt, and sugar in a bowl.

In another bowl, combine the Greek yogurt, vanilla, and eggs.

Next, fold the dry ingredients into the wet mixture until combined. Add milk as needed to adjust the batter consistency, then let it rest for 10 minutes.

Heat a non-stick pan over medium heat and add a small amount of butter.

Pour approximately 1/4 cup of batter into the pan for each pancake. Cook until bubbles form on the surface and the edges begin to set, about two minutes.

Flip and cook for another 30 seconds.

Serve with yogurt, blueberries, and maple syrup.
